Mayonnaise & Parmesan Cheese Chicken Breasts
They will ask what it is between mouthfuls, but don’t tell them! They’ll wrinkle up their nose and say REALLY? Yes! Really, and they are juicy, tender and downright delicious.
Try them!
Someone told me about them a long time ago. I thought it sounded gross but was desperate and in a hurry one day and made them.
They are fast and taste like you have some incredible recipe to share. It’s almost a let down to everyone once they know! So don’t tell!
**** Do NOT season this chicken dish with salt!****
There is enough salt in the cheese to add all the flavour you will need. You will see in the picture, I added salt and pepper to the chicken, then I salted it at the table, before I tasted it, a force of habit! Lesson learned!
Ingredients
6 Chicken Breasts - Boneless and Skinless
1 cup Parmesan Cheese
1 cup Hellmann's Real Mayonnaise
Shredded Parmesan Cheese (From Costco)
Salt & Pepper
Instructions

Put a light coat of olive oil on the bottom and sides of a 10" cast iron skillet.
Arrange chicken in skillet. Use a larger skillet if you're feeding a crowd.

Mix equal parts of the parmesan cheese with the Hellmann's Real Mayonnaise. Do not add any salt.
Once combined, loosely add in the shaved parmesan cheese.

Cover chicken breasts with cheese mixture.

A good side dish is Grandpa's Scalloped Potatoes.
2 10" CI skillets fit perfectly in the over and cook for about the same amount of time. (Potatoes take a bit longer depending on how you sliced them.)
