Chicken Quesadilla
I just winged this!! I had shredded chicken already so I mixed it with salsa and cheese whiz and quesadilla dry mix, and warmed it up so it was not cold when I put the quesadilla together, added chopped sweet onion, green pepper (not sautéed) to the mixture. Pre-heated the 8″ skillet put the bottom wrap down, added chicken mixture, and shredded cheese. Put the top on, browned then flipped it over. Moved it to a CI pizza pan, covered it in cheese and baked for 10 minutes at 385, then on hi broil for a minute or so… topped with hot green chiles, diced tomato and sour cream.
