Chinese Food

 It’s a shame Greg has a cold, this was REALLY tasty!

****TIP****

Frying hamburger or anything in cast iron for that matter has it challenges, so be good to your pan, and to yourself, and start out by heating your skillet! Put it on about 1-2 for five minutes, then up to 2.5 to 3 for another 5 minutes. You never just crank the heat. You do it gradually. Hover your hand over the pan, you’ll feel some heat. Don’t oil it! Take your hamburger and put it in. Hear it searing the meat. (So same method goes for your steak, chicken etc. for these you’ll need some oil, don’t oil your pan, oil the meat before you put it in the hot pan!!) then don’t mess with it, go chop veggies and let it sear. It will release itself from the pan if you leave it alone. If you stand there moving it around, you’ll have a lovey coat of hamburger to clean off later!

 

Ingredients

Lean Ground Beef
4 cloves chopped garlic
Heaping tablespoon Ginger
Chow Mien Noodles
I bag colourful shredded cabbage
2 stalks celery
2 stalks Bok Choy
1 sliced Red Pepper
1/4 cup or more sliced green onion
Stir fry sauce
China Lily Soy Sauce
Crisco Oil
Sesame seed oil

Instructions

Start with one 10" CI Skillet. Heat slowing as described in the tip above. Once it's hot (don't add oil to the pan) put your COLD hamburger in. Leave it alone. Don't stir. Wait until it sears and releases from the pan, turn it over, wait again. Once both side sear, you can move it around a bit, but less is more. Add some garlic and black pepper when it's almost cooked through. You don't need salt, there is enough of that in soy sauce. Prep all vegetables while hamburger is cooking.

When hamburger is cooked through, drain. Add a bag of colourful cabbage some sesame oil, 1/8 cup soy sauce, a heaping tbsp of minced or crushed ginger.

Mix in a bit of stir fry sauce to keep it moist.

In another preheated CI frying pan (12") add crisco oil to hot pan, celery, peppers, mushrooms.

Put a pot of water on to boil for the chow mien noodles so you'll be ready to add them (they take 3 minutes to cook)

There should be no over cooked veggies in Chinese food! Once they are getting heated through and almost perfect, add cooked and drained chow mien noodles, let them fry with the vegetables. Keep them on their own side so they can brown a bit. Add bok choy and green onions.

Mix everything together. Add sesame oil and some stir fry sauce.

At the table, put noodles on plate and top with meat mixture. Enjoy!
