Coconut Chicken
This is hands down the best (and quickest) chicken I make!! Coconut and Panko breading, fried in coconut oil.. yum yum yum.
The sauce is simple and fantastic!
1/2 cup apple jelly
1/4 cup honey
3 TBSP Dijon Mustard
Red pepper flakes
Salt to taste
Preheat cast iron skillet.
Pound all the chicken a bit to make sure they are all around the same thickness.
Dredge in flour, shake off excess flour.
Coat in egg.
Bread using 1/2 parts Panko and 1/2 parts shredded sweetened coconut.
Add Coconut oil to the hot frying pan, let it heat up so when you put the chicken in, it’s frying good and hot. (I actually never go over 4 on my gas stove even for frying.)
Once they are golden brown, drain on paper towel. Serve how ever you like, but don’t forget to include this sauce!!!
