Dru’s Amazing One Loaf Bread Recipe

Yes, I realize the picture shows 2 loafs! That is the beauty of this recipe… divide the dough any way you like, and because it’s for one loaf you can make it fresh for your family when ever you want! It takes less time then you think. No matter who you are… if you’ve baked bread all our life or you have never tried, DO IT NOW… use this recipe!!! It’s simple, it’s perfect every time. You don’t need any mixers or special equipment. Just a bowl, a spatula and the ingredients.

****WARNING****
This loaf gets big!!! Make sure your bread pan is the right size. I have a couple of cast iron pans that are on the small side, so I would easily get two loafs using them.

From this recipe Dru makes: Full Recipe = 4 Sub Buns or 8 Panini Rolls. 1/2 recipe = 2 sub buns or 4 Paninni or 1 sub and 2 Panini. We use the sub buns for Beef Dips, Sub Sandwiches, Panini’s used for hot dogs or sandwiches. At 65 cents per panini roll, it is worth doing the recipe for a family!!

Are you afraid of white bread? I hear from Dru you can use any type, so try some whole wheat!

You can substitute Bread Flour or Whole Wheat Flour if you prefer that to all purpose flour. Just add a tbsp or two more of water. You can also use 1/2 and 1/2 of the white and whole wheat flour with the same awesome results.

1 1/4 tsp traditional yeast
1 TBSP sugar
1 1/8 cups warm water (between 110 and 115 degrees F)

Mix in the bowl and let bloom for 10 minutes.

Then add 1 TBSP oil (I used Crisco)
1 TSP salt
3 cups all purpose flour

Bake 375 for approximately 30 minutes.

Add the oil, salt and flour, mix together using a spatula! (I did use a mix master with the dough hook once and the results weren’t as good.) Doing it by hand is more fun, and it takes very little effort.

Once all ingredients were combined, I turned the dough out on a lightly floured board and kneaded about 10 times. (Just keep turning it over on itself.) Spray with pam cooking oil, both side, put in a bowl, cover with plastic wrap and forget about it for 1 – 2 hours until dough is doubled in size. I did the whole 2 hours. Punch it down, not like your boxing, just gently… then put dough on a lightly floured board, knead slightly, and depending on what you’re making you can divide your dough or keep it as one loaf. Press into a rectangle shape and fold dough towards you half way. Seal that edge, turn dough, fold towards you again. As you do this, your shaping your loaf. I like to do 2 smaller ones. You can put in cast iron, or normal bread pans. As Dru often does for bread bowl, you make your own vessel using parchment paper and office clips! Make sure you oil your paper!!

Add chilli, soups, stew etc to your bread bowls for the very best comfort food!
