Ginger Beef Rouladen

Combine 1/3 cup olive oil and 1/3 cup soy sauce, a tbsp of minced garlic and 2 heaping tbsp pureed or chopped ginger (or to taste)
Don’t salt the meat.
Marinate Rouladen beef over night in the mixture.
Bring to room temperature before you start cooking.
Lay beef strips out, add bacon strips to cover meat, then layout 3 lines on top of the bacon of thinly sliced carrots, green peppers and onions.
Roll up starting at wide end.
Tie with twine in 3 places. Sear in preheated skillet, turning to sear all sides. I did add a bit of oil from the marinade before I put them in to sear.
Once browned, remove from pan, add about 2 tbsp butter and about 3 tbsp flour, mix, let it cook a minute or so, then add beef stock and the rest of the marinade. (I skimmed the oil off the top first.)
Cover and let simmer for 1.5 to 2 hours. Remove beef (Check it by putting a small knife tip through to make sure it’s tender.)
Leave uncovered and let the gravy reduce about 10 minutes.
Serve over rice.
