
Grandpa’s Scalloped Potatoes
Grandpa Campbell made the best Scalloped Potatoes!
This is his recipe… It makes even a hater of scalloped potatoes change their mind. (Ahem, Greg.) If you don’t CALL them scalloped potatoes, rather, you introduce them as cheese potato skillet, well… they’ll get some love.
Super easy to make.
Tip:
Don’t overfill your cast iron, or the sauce will overflow in your oven! Fill at your own risk.

Ingredients
3 large thinly sliced Russet Potatoes
2 small thinly sliced onions, sweet or yellow. The picture shows they are diced, but grandpa always did his with round slices. I had a time crunch!
Green Peppers. I had some left over, they are a nice additions. Sliced thin.
1 can Cream of Mushroom soup mixed with 1/2 can or so of water, milk, or cream.
Salt & Pepper to taste, plus some red pepper flakes if you like them.
Instructions

I used a 10" CI skillet, it makes a lot. Grease the bottom and sides with olive oil.

Put can of mushroom soup in a container, add the water, milk or cream to it and mix well. Add some salt and pepper.

Layer the potatoes around the outside edge of CI skillet. They can overlap each other a bit. Add a layer of onions and green peppers.

Add mushroom soup mixture over top. Continue with this process for 3 layers. Top layer gets the rest of the soup mixture.

Cover with shredded sharp cheddar cheese.
Bake at 350 for about an hour.

Not too bad for a Monday! Grandpa's Scalloped Potatoes, Baked Chicken breasts, and Nantucket Cranberry Pie!
