Hamburgers & Fries
Cooking meat in cast iron…
From what I’ve been learning, you want a hot pan, not oiled, and cold meat! I tried it and it works! To heat up your pan, put it on 1.5 – 2 for 5 minutes then up the temperature to around 3 for 5 more minutes. Hover your hand over the pan, feel the heat. If you are cooking hamburgers, make sure they are cold and not room temperature. Put them in the pan, and DON’T MOVE THEM. Walk away. Make something else. Don’t cover them either. Just let them cook. You’ll know when to flip them because you’ll see half of it is cooked and juices are coming out of the top of burger. Flip and leave it alone. This not only puts a great sear on your meat, it will make life much easier for you when you go to clean the frying pan.
Ingredients
Lean hamburger
1 egg beaten
couple squirts of 57 sauce
Worcestershire sauce
Garlic powder
Cowboy Hamburger spice
Pepper
Instructions

Combine all ingredients in a bowl. Don't over work the meat.

Make patties.

Put them in cast iron pan that has been heated so it's hot. DON'T MOVE THE MEAT once you put it in the pan. Salt the tops.

You'll see juices on the top of the burgers when it's time to flip. Again, flip and don't move them. They need to release from the pan on their own once they have a good sear.

Fries - Cut potatoes earlier in the day, soak in water to wash off all the starch. Drain, add new water, mix around, drain, add new water. When the water seems clear, place potatoes on paper towels and leave to dry.

Heat oil (crisco) on medium in dutch oven. Add potatoes. Don't cover the pot. It takes about 15 minutes to get them golden brown, depending on how big they are. Put them on before the burgers.
Remove, place on paper towel.
Add salt.

Enjoy! (I used soft french bread, buttered both sides, put in preheated cast iron pan, added Johnny's Garlic salt. Flip, add more garlic salt, flip until golden. Use in place of bun. yum yum yum....
