Philly Mini Meatballs
Running out of ideas for hamburger??
I had no idea what to make with more hamburger! (Great grandma and I found a sale and went a bit overboard… )
This came together nice and fast and tastes really good! It made a lot of meatballs. They all got cooked and one batch went to this meal, the other is soaking in tomato sauce for some baked spaghetti tomorrow night.
For the meat balls, I lined my 14″ cast iron pizza pan with parchment paper. I lined a cookie sheet with tin foil and popped them both in the oven on two racks. Lesson learned. Use parchment paper, not tin foil. See for yourself here. The ones that were baked onto the tinfoil are the ones soaking in tomato sauce. The others were tender and moist!

Ingredients
I package lean hamburger
1/3 cup seasoned bread crumbs
1 beaten egg
1/2 onion diced fine
Garlic powder (or cloves, I didn't have any)
Worchestshire Sauce
Heinz 57 sauce
Heaping TBSP of Horse Radish sauce
Salt & Pepper

Preheat oven to 400 degrees.
Mix meat with all ingredients.

Make small balls, about an inch round.
Place on parchment paper on 14" cast iron pizza pan or what ever you have. You can also put on a rack and let the dripping go onto a lined pan under the rack. I think it's easier to throw out parchment paper than to clean a rack. Bake for 30 minutes (give or take)

For a side dish I had some hash browns and onions to fry up. Heat 12" Cast Iron pan, then add crisco oil. Don't go higher than 3 for your temperature. Add onions to sauté. Add potatoes. MAKE SURE YOU WASH AND DRY YOUR POTATOES OR THEY WILL STICK. Don't mess with them! Don't stir them around, just leave them to brown. They will release from the pan, then you can move them around.

I made a sauce for the meatballs. Not pictured is Beef bullion Concentrate.
1/2 package cream cheese
1 can mushroom soup
milk
Salt & Pepper
Red Pepper flakes
Thyme
Rosemary

When meatballs are done, move the hash browns to one side of pan, add the meatballs to the other side. Drizzle with sauce and sprinkle with parsley. Serve extra sauce at the table.
