Ravioli & Fire Roasted Peppers with Tomatoes
So good!!! Colourful, full of flavour and fast to make… though I wonder how I managed to make so many dishes and why is my stove top always getting so spattered with oil!
Use your favourite fresh ravioli, bring some salted water on to a boil.
In a skillet, add some olive oil and the tomatoes, a bit of salt and some Italian seasoning. The tomatoes will start popping pretty fast, then I added some sweet fire roasted red peppers, and some white wine. Reduce. Turn off heat.
By now your water is boiling (don’t forget to put your pasta sauce on to heat).
Cook ravioli according to package directions. Mine took 5 minutes.
Once cooked, I drained the water out, added some diced marble cheese, put the hot tomato sauce over top, then add the tomatoes and peppers. The cheese will melt perfectly.
I drizzled balsamic glaze (from Costco) over everything.. it was so good! Oh I already said that!
