Salmon Cakes

Ingredients for Tartar Sauce:

1 cup real Mayonnaise
1 cup finely chopped dill pickles
1 Tbsp dill (fresh or frozen), OR 1 Tbsp finely chopped fresh parsley
1 tsp lemon juice
1 tsp sugar
1/4 tsp freshly ground black pepper

Ingredients for Salmon Cakes:

1 lb fresh salmon filet*
Garlic Salt
Black Pepper
Olive Oil
1 medium onion (1 cup finely diced)
1/2 red bell pepper, diced
3 Tbsp unsalted butter, divided
1 cup Panko bread crumbs (Japanese Style crumbs)
2 large eggs, lightly beaten
3 Tbsp mayo
1 tsp Worcestershire sauce
1/4 cup minced fresh parsley

I used an ice-cream scoop to have them all the same size. Fried in butter / olive oil until brown, flip and do the other side. Tasty and fast to do. Fresh salmon would be better I’m sure. I used 2 can’s of salmon.
