Shepherds Pie

Leftover potatoes on purpose??

Yes! Don’t we all do that? There’s always a use for leftover mashed, buttery potatoes!

Shepherds pie is so easy to make, and this recipe is very flavourful. If I were to do this in a casserole dish, I’d have potatoes lining the bottom of the dish. With Cast Iron (12″ pan was used here) it’s not necessary, which makes it all the easier. It’s practically a one dish meal if you have your spuds done already. Easy cleanup, gotta love that!

Here’s my tip of the day… this is ONLY my experience, others somehow have success with this…

****Don’t reheat mashed potatoes in cast iron****

I’ve never had success, (though I’m sure some do) and have always spent WAY too long trying to clean them out of my pan! Cast iron should wipe clean with little or no effort once it’s seasoned. Mashed potatoes in CI?? Not so much!

 

Ingredients

Lean Ground Beef
Onions
Thuringer Sausage (chopped small)
Salt, Pepper, Garlic Powder to taste
Concentrate Beef Bullion to taste
Ketchup to taste
Russet Potatoes (lots as they are great to have for leftovers)
Butter

Instructions

Sauté onions, mushrooms, add sausage, salt, pepper, and garlic powder. Add hamburger. When fully cooked, mix a few TBSP flour into hamburger mixture. Add beef bullion liquid to the mixture to make the gravy and keep it moist. Added ketchup, beef bouillon concentrate. A few ‘big squirts’ of each to taste. Add more beef bullion liquid if need be to make sure it’s moist and gravy is forming. More salt and pepper to taste. Add frozen vegetables. Cook on stove-top uncovered until vegetables are cooked through.

Potato Topping Boil and mash russet potatoes Add Butter, salt, and pepper Spoon over hamburger mixture in blobs, using the back of a spoon, connect the potatoes so there is no meat mixture showing through. Make a design in the top of potato by using fork tongs. Add shaved parmesan cheese on top.

Baked at 350 for about 20 minutes until top started to brown, finished it off under the broiler. Let it sit for 5 minutes or so before you serve it. It was a bit messy on the plate, but when I went to pull out the next slice after it had a chance to cool a bit it served up just like a piece of pie! Enjoy!

FOR THE POTATOES Boil in salted water, drain. Mash. Add at least one cup or more of shredded (old cheddar) cheese. ¾ cup sour cream ½ cup or more butter Salt and pepper. Whip it up by hand until fluffy.
