Caramelized Onion Pasta
This is a terrible picture, because we inhaled it and this was all that was left for the photo!
This IS REALLY good. From start to finish 1.5 hours. Most of it was oven time.
4 Yellow onions (thinly sliced) I DID 5
99g Sun dried tomatoes julienne cut by Bella Sun Luci (1 bag) I USED A 270 ML JAR, BUT USING AS LITTLE OIL FROM IT AS POSSIBLE. WORKED WELL. (President’s Choice Sun-dried Tomatoes)
1 tbsp Paprika
1 tbsp Italiano one step seasoning by Club House
1 tbsp Parsley (dried)
1/2 tsp Salt
1 tsp Black pepper
20 cloves Garlic
1/3 cup Olive oil
1/2 cup Coconut milk
1 whole lemon (juiced)
2 tbsp Fresh parsley (chopped)
1/4 cup Parmesan cheese (grated) I DIDN’T HAVE ANY, PUT MOZZA ON GREG’S
5 cups Eliccoidali pasta I USED PENNE
1. Preheat oven to 400F
2. Thinly slice your onions.
3. In a 13”x9” baking dish, add your onions, tomatoes, paprika, Italiano seasoning, dried parsley, salt, pepper, garlic, and olive oil.
4. Mix well and cover with tin foil.
5. Bake at 400F for 1hr. I DID TOTAL ONE HOUR 15 MINUTES. PLANNED THE PASTA COOK TIME ACCORDINGLY.
6. With 10min left cook your pasta and save 1/2 cup of noodle water.
7. Once done, remove your baking dish from the oven and add coconut milk, fresh parsley, lemon juice, pasta, and pasta water. Mix well
8. Top with parmesan cheese and enjoy!
