The Big Lynda Chicken Cheddar & Bacon Burger

This is my spin on the Big Mary at Mary Browns Chicken. I win! Marinated chicken breasts using half of this recipe:

Chicken Marinade
1 cup oil
1 whole lemon cut in half & juiced
2 tbsp water
1 whole garlic clove crushed
1 tbsp smoked paprika
1 tsp ground chipotle powder
1.5 tsp ground garlic
2 tsp onion powder
1/2 cup brown sugar
1 tbsp Salt

I sliced the chicken breast so we’d have thinner pieces, marinated for 4 hours, drain well on rack so you don’t cook (burn) the marinade.

Heat skillet, add olive oil and butter, add chicken. Deglaze the pan with white wine.

For the buns, I brushed melted butter on one side, mayo, cheddar cheese, red onion, sliced dill pickles and tomato. Next time we’ll add Queso Dip with Cheddar (Costco) and won’t use the tomato! Too messy.
